Following the results of 2008 Top-100 restaurants have been chosen among public catering institutions. The Top-10 of the best restaurants is: “Egoist”(Kiev), “Leo Club”(Kiev), “L’Opera” (Donetsk), “Atelier”(Kiev), “Velur”(Kiev), “Dacha” (Odessa), “Konkord”(Kiev), “Lipskiy osobnyak”(Kiev), “Mario”(Kiev) and “Monako”(Kiev).
According to the data of organizers most of the valued restaurants belong to the highest price segment (average bill was from 15-20 EUR); by that moment their working experience has been over 6 months.
Each of 200 establishments selected in advance has been twice visited by Mystery Customers, which have taken special training. While fulfilling special questionnaires, visitors assessed the work of cuisine, service, interior and restaurant’s status.
Expert questionnaire fulfilled by Mystery Guests, has been composed according to the international standards of valuating establishments of “Fine Dining” level; it included 72 questions and a number of additional comments in 12 units. Each of 12 sections belonged to a key criterion of work and had it own proportion in the total amount of the summarized grade.
“Person has completely fulfilled the questionnaire having scanned check, after coming out of the restaurant. In a week the same restaurant has been visited by another Mystery Guest and fulfilled the same questionnaire”, – told the project’s organizers; they added that post-test was conducted with the aim of checking work of the other relief.
Kiev and region were represented by 63 restaurants; Dnepropetrovsk and region – 6; Donetsk – 4; Zhytomir – 1; Lvov – 3; Odessa – 8; Uzhgorod – 1; Kharkov – 6; Khmelnitskiy – 1; Cherovtsy – 1; Cherkassy – 1; Yalta and Crimea – 4; Yaremcha – 1.
The most extensively exposed cuisine in the best restaurants of Ukraine is European (28). The next in popularity are Italian (14), Ukrainian (11), French (11) and Japanese (5).
Within the framework of the project restaurants of the regions mentioned below have been valuated: Kiev, Yalta, Alushta, Gurzuf, Donetsk, Odessa, Chernovtsy, Rovno, Uzhgorod, Mukachevo, Lvov, Bukovel, Truskavets, Poltava, Sumy, Dnepropetrovsk, Kharkov, Zaporozhye, Khmelnitsk, Lutsk, Ivano-Frankovsk and Cherkassy.
